Portabella Mushroom Pizza (gluten free!)

INGREDIENTS:
1/2 cup shredded mozzarella cheese
1/2 cup cheddar cheese (or cheese of your choice)
Tomato paste (or store bought pizza sauce)
Thinly sliced pepperoni (or any meat topping)
INSTRUCTIONS:
Preheat oven to 450. Cut off stem from portabella mushrooms and place them stem side up on a cookie sheet. Spread tomato sauce (you can use left over spaghetti sauce or tomato paste). Sprinkle shredded cheese on the top then add meat of your choice.
Cook the pizzas for 12-16 minutes in the oven or until cheese is bubbling and starting to turn light brown. Cool then serve.
NOTE: This is a fun pizza to make with the kids. They can add as many toppings to the pizza as they like or simply have cheese. Add salt and pepper to taste. For a more 'adult' version of this recipe add Gorganzola Blue Cheese and thinly sliced dried salami. After cooking, drizzle sweet balsamic wine reduction over before serving and garnish with a fresh basil leaf.
