Simple Mushroom Salad

INGREDIENTS
8 oz fresh mushrooms (use exoctic blend for more flavour) 1/4 cup balsamic vinegar 1/4 cup + 2 Tbsp cider vinegar 1/4 cup olive oil 1/2 red onion, minced very fine (or mild white onion) 1 tsp oregano (chopped) 2 tblsp lemon juice 2 tblsp fresh parsley (chopped)
INSTRUCTIONS:
Clean the mushrooms and lightly steam them for 5 minutes in a mixture of 2 Tbsp cider vinegar and enough boiling water to cover.
Mix all other ingredients together. Add mushrooms. Refrigerate overnight. Serve as a chilled salad as is or over lettuce and wedge of lemon. Drizzle citrus dressing for extra garnish and extra flavour.
